Get a fabia VRs she wouldnt know it was fast at all being a diesel and a chip and some other bits like brake upgrades go a long way with them and in the mean time you can get her onto a dual fuel zafira and save some money on the running costs o that as well as im sure a GSI aint far behind a coop in insurance costs even for a lass
Used Vrs are cheap enough now to be in your price range after the write off i reckon

Personally I would say to her that you really enjoy the experience of driving the Coupe and would not be happy if you did not get a replacement. Offer to take a advanced driving course as already suggested. Likely that this will fade away without you being forced to do it
